Serves 4
8oz canned plum tomatoes
1 lb. dried ziti
1 yellow onion
1 clove garlic
1 lb. low fat mozzarella
10 ea basil leaves
Salt and pepper to taste
Olive oil as needed
Directions:
1. Cook the ziti in salted boiling water for 8-10
minutes (or follow directions on the box).
When cooked, toss in olive oil and cool (the
pasta should be al dente).
2. For the tomato sauce: julienne the onions
and crush the garlic. Sautee them in oil
until translucent in color. Add the canned
tomatoes and cook at a simmer for 45
minutes.
3. When finished, puree and season with salt
and pepper.
4. Toss the pasta with the tomato sauce
and layer in a 9x6 baking pan with sliced
mozzarella cheese and basil.
5. Top with the cheese and bake for 30-40
minutes or until golden brown and hot.
